Here is something sweet and colourful to brighten up your picnic table! This mouth-watering treat is easy to prepare and sure to spread joy.

The dough needs some resting time in the fridge, so please plan as follows:
ca. 15 min preparing the dough
+ 30 min resting time
+ 10-15 min rolling and cutting
+ 10 min baking
+ 15 min decorating
This adds up to nearly one-and-a-half hours, but – good news – you do not have to be present all the time (e.g. resting time, baking time) and you do not have to do it all in one go. For example: The resting time may be longer, so you can actually prepare the dough on one day and continue with rolling-cutting-baking the next day.
Ingredients for the dough
200 gr butter
250 gr whole wheat flour
100 gr sugar
1 egg + 1 egg yolk
Juice of 1/2 lemon
Ingredients for the icing
200 gr icing sugar
Juice of 1/2 lemon
Water
Food coloring
Tools
Bowls
Oven and baking tray
Spoons
Kitchen Scales
Cookie cutters
Instructions
- Prepare your dough: Mix the ingredients well, until you have a firm dough.
- Cover the dough with wax paper and let it rest in the fridge for 30 minutes.
- Preheat the oven to 175° C.
- Knead your dough one more time, roll it out (thickness ca. 2-4 mm), cut your cookies and place them on a parchment paper covered baking tray.
- Bake your cookies for ca. 10 minutes, then allow them to cool.
- Mix icing sugar with lemon juice and food coloring, add water only if needed.
